Happy Pancake Day dear Readers!
Or martedì grasso, whichever you prefer.. today I give you orange rind and blueberry pancakes with mascarpone and honey!
Buon 'Pancake Day' cari lettori!
This is my first pancake day in Italy. You wouldn't think that this would be a problem however there are a few difficulties in translating ingredients lists, believe me. And I don't mean translating words, I mean actually finding the right products. The first time I made cakes here was disastrous. They don't have self-raising flour (well, they kind of do but it isn't very common) and you have to add the raising agent yourself. I overestimated and put an entire packet of vanilla baking powder in. Let's just say the cupcakes rose a little too much before plastering themselves across my baking tray in a burnt, biscuitty mess.
As a result, before my pancake party on Wednesday (woo hoo) I decided to experiment.
I used a saucepan because we hardly ever cook at home and so don't have a mixing bowl. Such city kids. This is 200g of plain four.
Next, I added my baking powder. I only added half a sachet to avoid explosions.
Then I threw in a teaspoon of bicarbonate of soda. I want fluffy pancakes!
Mix all of the dry ingredients together and crack an egg into a bowl. Pour in 300ml of milk (I used a mix of full-fat and semi-skimmed because I think about my health occasionally) and mix it together.
Make a well in the middle of your dry ingredients, pour the wet in and mix them all together until you have a nice smoothe pancake batter!
Melt the butter...
Sciogliere il burro...
And grate your orange rind straight into the bowl!
E grattugiare la scorza dell'arancia!
Finally, add your butter and whisk. At this point I also added a generous splash of maple syrup! Now you're ready for the main event! Get some butter melting in a saucepan.
Dollop a ladleful of your mixture into the pan and sit back in satisfaction as that warm buttery smell begins to fill the house. I threw a handful of blueberries in to experiment (hey, I've never made blueberry pancakes before!)
When bubbles appear, give it a little shake to free it up and get ready to flip! I possibly flipped a bit too early so made lots just to practice. Are you committed enough to make lots and lots of pancakes just to get that special perfect one? Yes I thought so.
Time to impiattarlo. Add mascarpone, some fresh blueberries, a drizzle of honey and some extra orange rind.
Aggiungere mascarpone, mirtilli freschi, miele e scorza d'arancia. Deliziosi!
My experiment proved successful. Let's hope tomorrow goes well!
L'esperimento era un successo. Speriamo che anche domani va bene!
I can't wait to try these on Friday! Friday is such a lovely weekday which nobody at home has a class/work or anything to do early in the morning so the only way it can get better is pancakes!
ReplyDeleteThank you for the lovely recipe! I'll let you know once it's done or even maybe whip up a blog post out of it!

DeleteAhhh how I love Pancake Day!
ReplyDeleteBlueberries are my favourite kind, and I like this idea to add orange and mascarpone to it. I normally have bacon and maple, but it's time to branch out.
{Teffy's Perks} X
I've never had bacon and maple (being veggie I doubt I will try this haha) but I think I need to branch out too as I've eaten pancakes thrice now and I've stuck with this combination every time! xxx
