I've been wanting to write this post for ages, ever since the guys at Sciatt a Porter sent me a very cryptic tweet a few weeks ago (I still don't understand it but there you go. That's what living in another language does to you.)

But first let's start with the clouds from my flight back to Milan last Monday. Aren't they beautiful?

Voglio scrivere questo post da quando i ragazzi a Sciatt a Porter mi ha mandato un tweet molto criptico un paio di settimane fa (in verità, non lo capisco ancora ma va bene, è così quando si vive parlando un altra lingua!)

Prima, cominciamo con le nuvole che ho visto mentre viaggiavo da Londra a Milano lunedì scorso. Belle no?


So back to my main point today which is... pizzoccheri! Now I know some of you out there will be unfortunate enough to not know what these delightful plates of yum are so I'll take you through it with the help of my good friend George (actually, Giorgio, Magro's Dad).

Torniamo al punto. Pizzoccheri! Allora, capisco che alcuni di voi sono abbastanza sfortunati di non sapere cosa sono i pizzoccheri e quindi, con l'aiuto del mio buon amico George (beh ok Giorgio, il padre di Magro) vi faccio sapere cosa sono.



The ingredients list above makes pizzoccheri for 4 people and requires 250g of cheese (fontina will probably be the easiest for you to get hold of out of that list), 200g of spinach or cabbage, 200g of potatoes, 150g of parmesan and unspecified quantities of garlic, sage, pepper and butter. And, of course, the pizzoccheri themselves, which are commonly described as "buckwheat noodles" on the English translations of restaurant menus. I'm going to guess it's about 100g per person like with most pasta dishes.

The artichokes were just lying around in the kitchen and aren't actually in the recipe but they could make an interesting addition...? Ok probably not and don't tell anyone from Valtellina, the region from which pizzoccheri hail, that I said that.

L'elenco di ingredienti qua sopra è per quattro persone. Ho tradotto l'elenco per gli inglesi e americani ma suppongo che si possa capirlo dall'immagine se si è riuscito a leggere questo :)

I carciofi erano in cucina e non fanno parte della ricetta. Forse potrebbero essere un aggiunzione interessante...? Ok probabilmente no e non dire ai valtellinesi che l'ho suggerito!

Your butter, garlic, sage and pepper will be thrown together as below.

Ok, ok so this is a very vague recipe but I didn't actually make these myself, I just watched whilst George created heaven on a plate. When I go back to uni next year I will apply myself 100% and figure out the actual technique. By the time I'd got to the kitchen, this bit had already been done - sorry! I guess it's up to you to create your perfect sauce ;)

Un sacco di formaggio. Paradiso!

Si mette il burro in padella con aglio, salvia e pepe come qua sotto.

Ok, ok, questa è una ricetta molto vaga però non l'ho fatta io, ho solo guardato il processo mentre George ha creato il paradiso sul piatto. Quando torno all'università anno prossimo, cercherò di farla me stesso per trovare la tecnica e dare i consigli agli inglesi su come farla! Quando sono arrivata in cucina, il burro era già pronto - tocca a voi per creare il condimento perfetto!





Next, throw your vegetables into salted, boiling water and after five minutes, add the pizzoccheri. Then admire your Italian kitchen full of fresh, wholesome ingredients.

Mettere le verdure nell'acqua bollente e salata e dopo cinque minuti, si aggiungono i pizzoccheri. Poi ammirare la cucina italiana piena di ingredienti sani e freschi.




Complete with Italian holding his brand new recipe book if you like.

Next comes the best part. After your pizzoccheri have been cooking for about 10 minutes, drain it all and begin adding your cheese. Alternate between the chunks of fontina and the grated parmesan and keep stirring until it's all melted and oozey and you just want to put your face in the bowl.

Poi viene la parte migliore. Dopo 10 minuti, scaricare l'acqua e cominciare di aggiungere il formaggio. Alternare tra la fontina e il parmigiano e girare fino a quando è tutto sciolto e vuoi mettere la faccia nel mezzo.

Once all the cheese is in, add your garlicky, sagey butter and you're good to go!

Quando hai aggiunto tutto il formaggio, condirlo con il burro e avanti!






The result of your efforts will be one of the most delicious and warming comfort food dishes that you have ever tried.

I am a huge pizzoccheri fan and eat them at every available opportunity. Sadly, lots of restaurants are taking them off their menus due to them being more of a winter dish but luckily for me, Sciatt a Porter has just opened up around the corner. Their speciality? Valtellinese food. Which means? Pizzoccheri. All the time.

Il risultato dei tuoi sforzi sarà uno dei piatti più deliziosi di cibo di comfort che tu abbia mai provato. 

Io sono un grande fan dei pizzoccheri e li mangio in ogni occasione disponibile. Purtroppo, molti ristoranti stanno togliendogli dai loro menù perché sono più di un piatto invernale, ma fortunatamente per me, Sciatt a Porter ha appena aperto vicino a casa mia. La loro specialità? Cibo Valtellinese. Che significa? Pizzoccheri. Tutto il tempo





Obviously I was in love with the place before even stepping foot inside. Along with our  beloved pizzoccheri, they also specialise in sciatt (pronounced shat tee hee) which are deep-fried balls of cheese in batter.

The dècor makes me think Ikea meets the mountains with lots of simple design twists that evoke the great outdoors and the fresh mountain air you can expect to find if you happen to venture to Valtellina.

We were even greeted with a free antipasto although I couldn't eat it due to my vegetarian affliction.

Ovviamente ero innamorata di questo posto prima di mettere piede dentro. Insieme con pizzoccheri, fanno anche gli sciatt che sono palline fritte di formaggio in pastella. 

L'arredamento mi fa pensare a Ikea nelle montagne con il design semplice che evocano i grandi spazi aperti e l'aria fresca di montagna che si può aspettare se vi capita di avventurarsi in Valtellina. 

Abbiamo anche ricevuto un antipasto gratuito però non l'ho potuto mangiare a causa della mia afflizione vegetariana.



Magro was very happy with it. In fact, I believe he said I could quote him on the blog saying that the food was "good". This is a very high commendation from him. It took me a couple of years to cook something up for him that got more than a shrug.

Magro è stato molto soddisfatto. In realtà ha detto che posso citare sul blog che il cibo era "buono". Questo è un complimento alto da lui. A me ci sono voluti un paio di anni di cucinare per lui prima di ottenere più di una scrollata di spalle.



He went for a plate of cold cuts and a cone of sciatt (which I happily helped myself to) whilst I obviously went for the pizzoccheri and a nice glass of Valtellinese red wine.

Ha preso i taglieri di salumi valtellinesi e un cono di sciatt (ho aiutato con questi) e ovviamento ho preso i pizzoccheri e un bel bicchiere di rosso valtellinese.

They were absolutely delicious. To make matters infinitely better, they were giving out vouchers for a free cone of sciatt to be redeemed at a later date. If you ever fancy some deep-fried balls of cheesy goodness whilst committing yourself to furthering your cultural knowledge, swing by and grab a cone to go!

Oh and the bread on the table was so soft and so yummy. I wasn't even that hungry but I couldn't help munching it!

Erano assolutamente deliziosi. Per rendere le cose infinitamente meglio, davano i buoni per un cono di sciatt gratis da rimborsare in un secondo momento. Se mai viene voglia di alcune palle fritte di bontà, mentre di impegnarsi per approfondire la vostra conoscenza culturale, vai a prendere un cono d'asporto! 

Oh, e il pane sul tavolo era così morbida e così appetitosa. Non avevo la fame, ma non ho potuto fare altro ma sgranocchiarlo!




My beautiful pizzoccheri. Ok, so pizzoccheri isn't the most beautiful of dishes. It isn't going to win any prizes for presentation. Gordon Ramsay would probably turn his nose up at this. Until that nose got wind of the cheesy, sagey scent of really good food.

I miei belli pizzoccheri. Ok, in generale non è il più bello dei piatti. Non vincerà nessun premio per la presentazione. Gordon Ramsay probabilmente non darà una seconda occhiata a questo. Fino a quando il naso ha sentito il profumo di cibo davvero ottimo.


I've got to say, these were damn good.

Who makes them better, George or Sciatt a Porter? I can't decide. They were both fantastic. Obviously there are perks to homemade food and George used more vegetables which I really liked but on the other hand, the creation at Sciatt was just a tad more sagey which to me is the holy grail of flavours. Along with truffle. Although I don't think these two would make good culinary playmates.

In any case, George is a magnificent chef. I am blessed enough to eat his creations on a regular basis and can say that he has ruined many restaurants for me, he is that good (I mean, why would I pay for mediocre food when he is a genius and I get to eat it for free?)

He didn't quite manage to ruin Sciatt for me though - woo hoo!

In fact, the only complaint we had was that although we asked for everything to be brought at the same time, Magro's food came ten minutes before mine did (it takes longer to make the pizzoccheri as they're freshly cooked on site). Obviously the solution to this is for everyone to order pizzoccheri!

Devo dire, questi erano buonissimi.

Chi li rende migliori però, George o Sciatt a Porter? Non riesco a decidere. Erano entrambi fantastici. Ovviamente ci sono vantaggi per il cibo fatto in casa e George ha usato più verdure che a me è piaciuto molto. Da l'altra parte, la creazione a Sciatt conteneva più salvia che per me è il Santo Graal dei sapori . Insieme al tartufo. Anche se non credo che questi due farebbe buoni compagni culinari.

In ogni caso, George è un magnifico chef. Sono abbastanza fortunata da mangiare le sue creazioni regolarmente e posso dire che ha rovinato molti ristoranti per me, è così bravo (voglio dire, perché dovrei pagare per il cibo mediocre quando lui è un genio e mi capita di mangiare gratis?)

Lui non riusciva a rovinare Sciatt per me - woo hoo !

In realtà, l'unico problema che abbiamo avuto è stato che anche se abbiamo chiesto per tutto di essere portato allo stesso tempo, il cibo di Magro è arrivato dieci minuti prima che il mio (ci vuole più tempo per fare i pizzoccheri perché sono cucinati a richiesta). Ovviamente la soluzione per questo è per tutti di ordinare pizzoccheri!



We were quite full up after dinner and decided to go for a walk before even considering dessert (which ended up being overindulgent anyway - typical!) Soon I'm not going to be able to fit in my jeans with places like this in the area.

Eravamo abbastanza pieni dopo cena e abbiamo deciso di fare una passeggiata prima di considerare dessert (che infine era molto indulgente - tipico) Presto, non sarò in grado di indossare i miei jeans con tutti questi posti in zona.






You know when you're in a different country and you point at something and ask what it is, understand nothing, order it anyway and then wish you knew what it actually was? I did that. The glossy chocolate slice is worth getting. Just point at it.

Sai quando si è in paese diverso e si indica con la dita e si chiede "cos'è?", si ascolta, non si capisce niente, si ordinarlo comunque e poi si vorrebbe che conoscesse perché è talmente buono? L'ho fatto io. La torta lucida di cioccolato vale la pena. Si deve solo indicare con la dita.


And then to bed. Too much food for this English gal! And that really is saying a lot... congratulations to Sciatt and Princi.

E poi a letto. Troppo cibo per questa ragazza! E questo è impressionante ... complimenti a Sciatt e Princi!
